Haven't Been to the Grocery Store Dinner
I do love cooking, but I don't love shopping! So I feel very accomplished when I can make a dinner from what's on hand!
This is one of those Easy, Haven't Been to the Grocery Store, What Can I Throw Together, Surprisingly Tastes Good Dinners!
I got out one of my trusty crockpots & opened the frig, freezer, & pantry.
Sliced, grilled chicken strips
1/2 bottle of Alfredo sauce
Parmesan cheese
Zesty Italian dressing
Frozen peas
Frozen carrots
Can of diced tomatoes
Salt & pepper
I dumped everything in, & put the crockpot on low for 3 hours. I served this Italian Chicken Soup topped with some Bruschetta Rounds from the pantry. I also set out a bowl of red & green grapes for munching.
That's one more day I can put off going to the Walmarts!

A Dad's Perspective
After I posted yesterday's article, I was checking out Facebook. A friend of ours had posted his thoughts on keeping his children (4 teens) pure & safe. I was very impressed & touched with what this awesome Christian dad had to say. With Ed Allen's permission, I'm sharing his post today! Thanks Ed!
With all of the first day of school posts that I have seen and the
Miley Cyrus performance, I feel the need to say something "out loud" for
my benefit and my family's benefit.
I was in the front room
the other night and in run my kids wanting to watch the VMAs ...
evidently Justin Timberlake is a big deal (and N'Sync was on) ... I
watched patiently for a bit and did not see Miley Cyrus' (she's had a
place in our house for years as Hannah Montana and is 1 year older than
my oldest) performance. However, I have now heard about it and read
about it and have now watched it.
IN MY OPINION: What I just
watched Miley Cyrus do is TRASH of the highest magnitude. And I have
seen a LOT of trash in my time. This is NOT an opinion on her talent. As
a result, I feel the need to say that I want to put the whole world and
the "lord" of this world on notice effective immediately ...
YOU CAN NOT HAVE MY BABIES AND I WILL FIGHT YOU UNTIL MY LAST BREATH
AND WITH EVERY WEAPON AT MY DISPOSAL AND ON INTO ETERNITY FOR THEIR
SOUL!
I feel and mourn for family's that lose children
physically but more important to me is that I help my wife and children
not lose their spiritual lives and lead our family in that way. I am not
perfect, just ask my wife. But, I am horrified by what I just saw.
Take heed Mommy's and Daddy's, the Enemy wants our children and is not
overtly breaking down our front doors to access them, but rather
sneaking into their lives in their music, their videos and places where
day in and day out he can steadily feed them his diet of filth and
trash.
And to my children, if I EVER find out about an activity
or action that you take part in that is contrary to the Laws of
Almighty God, I WILL be pulling you physically, spiritually and (if
needed) publicly off of that stage, platform, edifice or whatever other
venue in which you find yourself to take you out back and re-deliver
whatever lesson needs to be re-addressed.
You will NEVER, EVER
NOT be my child and I love you. You will NEVER, EVER be too old, too
popular or too cool to have to listen to me as your Daddy. And, as a
result you will NEVER, EVER be alone in your fight with the Enemy. I
love you too much.

NOW!
Okay, so at 49 years old, I'm not that up on all the pop culture going around. However, I do watch a local morning show that has news, entertainment, cooking, fashion, parenting, etc. On this show yesterday & today, they showed a clip of a female "entertainer" at an awards show. She was on stage with a male singer, in her underwear. The "twerking" she was doing & other moves, were NOT entertainment. They were vulgar, disgusting, & embarrassing. I can't imagine how her family felt watching this "performance".
So, Moms, all of this has me thinking even more about what our sons & daughters are being attacked with on a daily basis. I know a statement has been made in the past that 80% of what's on the internet is porn. I'm thankful for the other 20%, but we have to fight against that 80% NOW!
We HAVE to teach our daughters that they have value because first of all, they are made in the image of GOD! They have value because of who they are, their hearts & spirit. It's NOT about how they dress & can move their bodies! Impress on them that someday their husband will see all their past photos & videos, & talk to their friends & family. Do they want to feel pleased about that, or ashamed? A future husband wants to know that she belongs only to him, her body is for his delight only. That gift starts now! The way young ladies choose to dress, they way they carry themselves, the line that's drawn between being friendly & being provocative starts NOW!
I don't have any daughters, but someday (hopefully) I will be blessed with a couple of daughters through marriage. I pray for these unknown young ladies NOW! I pray that they are following Christ, drawing closer to God, & learning all they can about how to care for their husband, children, & homes. I pray that they are keeping themselves pure in thought, speech, & behavior. I pray that they have lots of friends, male & female, so they can learn how to relate to all. I pray that they respect themselves, & they respect & value guys who are made in the image of GOD, & they realize that guys aren't to be ridiculed as the enemy or stupid oafs.

It's NOT about how much money they have & how tough they are! Impress on them that someday their wife will see all their past photos & videos, & talk to their friends & family. I pray that they are following Christ, drawing closer to God, & learning all they can about how to care for their wife, children, & prepare for a career to provide for their family. I pray that they are keeping themselves pure in thought, speech, & behavior. I pray that they have lots of friends, male & female, so they can learn how to relate to all. I pray that they respect themselves, & they respect & value young ladies who are made in the image of GOD, & they realize that young ladies aren't objects to lust after or ridicule.

I am not a big movie goer. I don't want to see every movie that comes out, in fact there are very few I want to see.

Homeschooling 101 - Part A - Remember These Ten
School starts soon! I 'think' we have everything ready here! Our co-op registration is tomorrow & I can't wait to catch up with friends there!
I've had lots of moms ask me about homeschooling through the years. I'm amused by this, because I remember being the mom who had soooo many questions for the veteran homeschoolers! Now as my oldest is a Senior, I realize we've been formally homeschooling for 14 YEARS.
After recreating numerous emails to answer questions, I finally created a document with as much information as I could think of to pass on to those considering, new, or just looking for something different to homeschool. So, here is Homeschooling 101 - Part A - Remember These Ten
FIRST, every family, every child is unique. What works for our family, may or may not work for yours. What works for one child in your family, may or may not work for each one. Please take that into consideration with the recommendations that I make. They are ONLY recommendations.

FIRST, every family, every child is unique. What works for our family, may or may not work for yours. What works for one child in your family, may or may not work for each one. Please take that into consideration with the recommendations that I make. They are ONLY recommendations.
SECOND, every curriculum we
have used, currently use, or plan to use has a Biblical Worldview. Not every one has a the same Biblical view. This means you will need to
pre-read & possibly do some editing, especially with younger children. It has been very rewarding to see our sons
catch the scriptural errors.
THIRD, I strongly believe in
homeschool mentors & contemporaries!
This means find some homeschool moms who have been doing this for 3 –
100 years more than you. Ask them questions,
& filter what they say for how that works for your family. Also, have some
friends that are currently homeschooling children close to the same age as
yours. These will be the ones who will
laugh & cry with you (sometimes at the same time!). Also, know that life & families change
& grow; the mentors / contemporaries that you start with will also change
along your journey. Treasure them all!
FOURTH, I have not found one
curriculum / publisher that works for every subject for every grade. Mix & match & adjustment has worked
for us. Be willing to switch as your
children grow & change. Research
online, through others, & at the homeschool book fair, but don’t obsess
over products that teach basic knowledge.
It may take a while as your children grow, but YOU will know what will
work best for them.
FIFTH, homeschooling does
NOT have to be expensive; some families do the majority of their work through
the library. I have lots shelves of
books that I’m willing to loan; & so do many other homeschoolers. Swapping and/or reselling has worked great
for us & many other families. Also,
having your children write on notebook paper instead of in a workbook is a
great way to save money. The Bible &
“real books” are wonderful resources.
SIXTH, enjoy the journey!
Sometimes you will want to put them on the nearest school bus. Take a mommy timeout & PRAY! God has given us everything we need for life
& godliness & this includes discipling & educating our
children. Remember this is more than
them learning their ABC’s & 123’s.
This is about them growing into a real, personal relationship with
God; learning about life while you are there to guide them; learning how to
handle temptation, sin, & disappointment by seeing your example; learning
how to be a godly, productive person in society; learning how to relate to
people of all ages & stages, not just their “peer group”. Look to Jesus’ example of discipling as a
model – he was with them every day, all day, in all situations – teaching,
living, interacting with them & others & God. Our children are our disciples that God has
blessed us with!
SEVENTH, when you hear or
read something that really speaks to you: write it down! These are great for when you need
encouragement or a reminder of “WHY am I doing this?” Also, pass them on to
other moms. Live the Titus 2 life; there
is always someone older / more experienced that you can learn from. There is also always someone younger / less
experienced who can learn from you.
EIGHTH, you are raising your
own friends. Again, this isn’t just
about education, it is so much more about relationships - parent / child;
siblings; most importantly with God.
NINETH, don’t feel you have
to know everything about everything. Teach

Aunt Joyce
This is my Aunt Joyce with some her great-grandchildren. Aunt Joyce is one of my mom's sisters & lives in Kansas Since she lived close to my grandparents, her home was one of our gathering places.
Aunt Joyce has always loved & enjoyed children! Her own three daughters, many nieces & nephews, grandchildren, & great-children. She exemplifies God's love for children with her life!
But Jesus called them to him, saying, “Let the children come to me, and do not hinder them, for to such belongs the kingdom of God. Luke 18:16
Come, O children, and listen to me; I will teach you the fear of the Lord. Psalm 34:11
Her children rise up and call her blessed. Proverbs 31:28
I get to travel with my mom & Cousin Connie to visit Aunt Joyce next week! I can't wait to see her & visit.
Please pray for my Aunt Joyce, as she's fighting lung cancer at this time. We trust in the Lord & know he hears our prayers!

My Favorite Brother
"Jeerrryyy, did you know you're my FAVORITE brother?"
"Lil Sister, I'm your ONLY brother."
"But if I had a 100 brothers, you'd still be my FAVORITE."
(Sigh) "What do you want?"
My brother, Jerry, & I have had this conversation many, many times through our lives! Usually cause I needed a favor, wanted to borrow something, or help with a challenge. ALWAYS for the last 49 years, my Big Brother has come through for me!
Jerry is an awesome brother, a wonderful friend, a trustworthy confidant, a fun companion, a lover of trivia, a terrific dad to his daughter, & the best uncle for my sons!
Our relationship has always been close, & we only had a couple of years of fighting when we were growing up. He is truly the one I can call at 3 AM & say, "Big Brother, I need you." His only response would be, "I'm on my way." The great thing is, it's a two way street!
I'm always so sad when I here that someone has lost a sibling. That's a loss of a large part of your childhood & who you are. Your parents have memories through the eyes of an adult. But, your sibling shares the memories through the eyes of a child!
Yesterday was Jerry's birthday & mine is this Saturday. We've always had the tradition of calling each other EARLY on our birthdays. That way, we're the first one to say or sing Happy Birthday. We have celebrated our birthdays together for most of our lives & wouldn't have it any other way! It makes the celebration even more special to share it with my Big Brother!

Recipe Ideas: Here's What's for Supper!
One of my very favorite, could eat any time, several days a week . . . MEXICAN FOOD! Specifically, good ole TEX MEX! It's one of my 'love languages'. Today I'm fixing a double batch of everything to share with some sweet friends who have just moved. So the amounts will feed 8 - 10, just adjust to however many people you need to serve. Also, seasonings are to taste.
Supreme Nachos
1 large bag of white or yellow corn tortilla chips
1 large container of lite sour cream
Taco Queso (below)
Refried Beans (below)
Guacamole (below)
Let each individual build Supreme Nachos in their own dish.
Taco Queso (YUM)
Brown 4 lbs of ground beef, while cooking add salt, minced onions, cumin, & chili powder
Drain & place into a crock pot.
Add 2 lbs of Velveeta (cubed)
2 cans of Rotel (1 mild, 1 original)
1 c of shredded 'Fiesta' cheese mix
Heat on high for 30 min, reduce to low for an hour, & then put on keep warm until ready to eat.
Refried Beans (Pretty basic)
2 cans of fat free refried beans
1 lg can diced green chilies
Mix & heat on stove or microwave.
Guacamole (Sam's version)
4 avocados (peel & cube)
minced garlic
minced onion
2 tomatoes (diced)
2 jalapenos (remove seeds & ribs, minced)
Put all ingredients in a bowl. Mash with two forks. Should be creamy yet chunky.
Mexican Bean Salad (Howard & Annette's favorite)
2 bags of romaine lettuce mix
2 tomatoes (diced)
1 bell pepper (remove seeds & ribs, diced)
2 cans of light red kidney beans (drained)
1 bag of original Frito's
1/2 c. of shredded 'Fiesta' cheese mix
2 tsp. of chili powder
1 bottle of Lite Catalina Dressing (I use Kraft)
Toss all ingredients together in a large bowl.
3 8oz pkg cream cheese (fat free)
1 c splenda
1 t vanilla
¼ c lemon juice
Melted butter
Cinnamon sugar

Sopapilla Cheesecake (Kent loves it)

cans of crescent rolls (I use the Grands style) 3 8oz pkg cream cheese (fat free)
1 c splenda
1 t vanilla
¼ c lemon juice
Melted butter
Cinnamon sugar
Press 1 can of rolls into a 9X13 baking pan. Press seams together.
Mix
cream cheese, splenda, vanilla, & lemon juice together. Spread over dough.
Place the other pkg of rolls over mixture. Press seams together
Brush
melted butter over top of dough.
Sprinkle with cinnamon sugar.
Bake
at 350 for 30 min. Best when warm!

My sons were out of town for 4 of the last 7 weeks. That's hard on a homeschool mom who's used to having them around! Of course, every trip was with the church, so I'm very happy they had the opportunities to go!
My Andy is a Senior & he'll turn 18 in 5 months. He's our first child & has brought laughter & sunshine into our home! Andy graduates Homeschool on May 2, 2014.
Every May, our church has a recognition night for graduating seniors. Part of this night is a Power Point presentation that parents put together of photos & a message. So . . . because I plan ahead, & because I know that more time is available this summer, than next spring . . . I decided to start going through photos.
Not. A. Good. Idea.

Again, going through photos of my baby while he's gone & I'm missin' him...Not. A. Good. Idea.
